Sunday Gravy by Chef Rachael Afra
I absolutely love this sauce, also known as Sunday Gravy, which I can enjoy any day of the week. It's perfect for those times when I'm feeling hungry and want something quick and easy to prepare, but with loads of flavor. This particular recipe doesn't contain any meat, but it can be easily adapted by adding leftover beef or pork to your preferred pasta dish.
Prep Time: 25 mins Cook Time: 1 hour Total: 1hr 25 mins Yield: 2-2 1/2 Cups
Ingredients:
1 lb. Roma Tomatoes, medium dice
1 Yellow Onion, medium, fine chop
2 Garlic Cloves, minced
1-2 Cubes, Homemade Pork Bouillon
1 T. Bacon Grease
2 T. Dried Oregano
1 T. Dried Basil
1/2 T. Dried Marjoram
2 t. Black Pepper
1-2 T. Himalayan Salt
2 T. Olive Oil
4 C. Cold Water or Beef/Pork Stock
Preparation:
1. To prepare a delicious pasta sauce, heat olive oil over medium heat in a 5-quart pot. Add garlic, onions, and tomatoes, and cook until the vegetables become translucent. 2. Lower the heat after adding water or stock.3. Then, mix in dried spices, pork bouillon, and bacon fat and allow the sauce to simmer until it is reduced by half. 4. Serve the sauce with your favorite pasta for a flavorful meal.
Chef's Note:
Here's a simple recipe for Sunday gravy that can be made with leftover beef or pork. It may come out a bit greasy, but don't worry - sometimes the grease can seep onto the plate. For a touch of sweetness, add half a carrot to the mix. Enjoy!
