Baba's Awesome Garlic Shrimp

An easy, crowd-pleasing, Scampi-style dish done stovetop

Preparation:40 Minutes Cooking: 15-20 Minutes Total time: 45 minutes - 1 hour

Yield: Enough for 4-6 people



Ingredients: * 1 lb. -2 lbs.  26-30ct. Peeled & Deveined Shrimp * 2-4 whole bulbs garlic - Peeled, and chopped * 1 Bunch of Italian Parsley - Rough chop with some reserved for garnish.* 1/2 - 2/3 cups of Extra Virgin Olive Oil* 2 - 3 Lemons cut into wedges.* 1 box Dry Linguini PastaProcedure:Let's Cook!1. Cook your pasta ahead of time according to directions to al dente. Drain, drizzle with olive oil set aside in a bowl, and cover.2. Preheat your pan to medium heat for 30 seconds then add 1/2 cup of olive oil3. When the oil begins to shine and move add the garlic and increase the heat to medium-high stirring constantly.4. Continue to stir the garlic until it begins to soften. You don't want it to brown or burn so adjust your heat as you go.5. At this point, return the heat to medium-high if needed and add the shrimp in one layer cooking and turning as they become done, then transferred to a holding plate.6. Reduce the heat and add the cooked pasta and toss to heat through.7. Add the Shrimp to the Pasta and toss them together.8. Platter and serve ringed with lemon or served on the side.Enjoy!Optional Ingredients :White wine. calabria peppers, red chili flakes, fresh baby bell peppers, fennel, leeks, fresh corn cooked in pasta water, scallions, chives, or just about any veggies. Of course, you can reserve a little pasta water to add if you like.Cookware: Cast Iron is optimum. You can do this dish in any large flat bottom skillet type pan that won't crowd the Shrimp.Tongs and/or Spork A colanderYour favorite knife - Your favorite paring knife for fresh shrimp - Set them on ice as you work and clean and rinse well. Do this over or near the sink, or outside.
